Lapsi
Ingredients :
- 1 cup broken wheat (dalia)
- 3/4 cup ghee
- 3/4 cup sugar
- 2 1/2 cup hot water
- 2 tablespoon almonds
- 1 teaspoon cardamom powder
- 16 -18 raisins
Method :
- To begin with take raisins to soak them in half cup of water.
- Now pour ghee in a pan, place it on the flame and add broken wheat.
- Cook it on high flame until it changes colour to pinkish brown.
- Pour hot water. Cook it on medium flame by covering the pan partly. Cook till water evaporates.
- Check if the wheat has turned soft, else add more water to make it tender.
- When the water evaporates completely, add ghee, sugar and half a cup of water. Stir well. Put a griddle (tawa) below the pan and cook for almost 10 minutes on low fire.
- Once ghee begins seeping out of the pan, lapsi is prepared.
- Garnish with pistachios and almonds. Serve hot.
