Gatte Ki Sabji
Gatte ki sabji is a mouth-watering Rajasthani main course dish. It is a very popular and spicy curry recipe of Rajasthan.
Ingredients :
For Gatta :
- 200 grams besan (bengal gram flour)
- 1/2 tablespoon red chilli powder
- 1/2 tablespoon haldi powder
- oil
- salt to taste
For Gravy :
- 2 tablespoon ghee
- 1 tablespoon red chilli powder
- 1/2 tablespoon haldi (turmeric) powder
- 1 small bowl curd
- 1/2 tablespoon dhania-jeera powder
- a pinch of heeng (asafoetida) powder
- jeera
- salt to taste and some chopped cilantro (dhania)
Method :
- Pour one litre water in a pan. Put it to boil on slow flame.
- Now take besan, 2 tablespoon oil, 1/2tablespoon red chilli powder, 1/2 tablespoon haldi powder and salt to taste.
- Mix all these ingredients well and till it becomes a solid dough.
- Now make small round pieces from this dough. Also make thin rolls about 5-6 inches long.
- Allow these pieces and rolls to boil for 5-6 minutes in the boiled water.
- After boiling these rolls, keep them aside for 2 minutes to ally them to cool.
- Keep the water initially boiled for gattas in a separate container.
- Cut the rolls into small pieces now.
- Pour ghee in a pan. A few seconds later, add jeera (cumin seeds) to it.
- Then add to it red chilli powder, haldi powder and a nip of heeng power. Add curd and heat for a minute or so.
- Next add gattas, dhania, jeera powder and water. Add salt to taste and cook for about 5 minutes.
- Gatte ki saji is ready. Sprinkle some chopped cilantro before serving with parathas.
