Recipes of Rajasthan
Culinary art in Rajasthan is as majestic and royal as the state itself. Thanks to the firm determination of the people whose struggle against all odds of nature makes Rajasthan boast of such a varied cuisine. The effort of devising lip-smacking recipes while in rough and tough terrains of Rajasthan is worth appreciating. Rajasthan cuisine has now earned international reputation. Rajasthan offers an array of culinary delights that tantalize taste buds.
The ingredients used in the recipes in Rajasthan are carefully chosen keeping in mind the geographical limitation and not out of taste. Cooking in Rajasthan has always been a serious business. The cooks had to think of recipes that required least usage of water, could be stored for a long time span, used less of vegetables and did not require re-heating. This was because of water scarcity and infertile soil in the desert. The cooks ensured the food to be of high nutritional value.
Use of milk, butter milk and milk products in Rajasthani cuisine could be commonly observed. Most of the recipes are based on the use of crops namely barley and millet, beans like ker and sangri are dry lentils. Yet another popular ingredient is gram flour. Rajasthani curries are not as spicy and hot as they usually seem to be. Ghee or butter forms the medium for cooking, chutneys are prepared from local spices.
